Today we are tackling a recipe full of oriental flavors, Korean-style fried chicken wings: Korean Fried Chicken! The recipe is done in two stages, we start by frying the fins in dough then we pass them in a sweet and spicy sauce before devouring them, with your fingers of course!


List of ingredients

For the chicken
16 chicken fins
125g. of flour
1 tsp. cornstarch
1/2 cc. baking powder
1.5 dl. cold sparkling water
Frying oil
Salt
For the sauce
6 garlic cloves
5 cm fresh ginger
5 tbsp. Japanese soy sauce
8 tbsp. Korean chili paste (gochujang) or, failing that, another (sambal oelek type)
3 tbsp. rice vinegar
1 tbsp. sesame oil
5 tbsp. dark brown sugar
Sesame seeds

Preparation steps

1 To prepare the batter, mix the flour, starch, baking powder, and salt and add the water, mixing, to obtain a uniform consistency.
2 Heat a frying bath to 180 ° c. Pass the fins in the dough and fry 6-8 minutes in small quantities.
3 To make the sauce, finely chop the garlic and ginger.
4 Combine all the ingredients in a small saucepan and bring to a simmer over medium heat then leave to thicken for 5 minutes.
5 Once all the fins are fried, pass them in the sauce to coat them well.
6 Serve hot, sprinkled with sesame seeds! Enjoy your meal'.
