hello friends, today I will present a simple and quick recipe for noodles with zucchini and carrots. Vegan and less than 20 minutes from zoodle. Healthy and carries a flavor you can't imagine really delicious.
Ingredients
1 tablespoon olive oil
4 garlic cloves chopped
1/2 teaspoon ginger minced
1/2 red chili sliced
1/2 cup onion chopped
1/2 cup tomato puree
1/4 teaspoon turmeric
1/4 teaspoon cumin
Salt & Pepper
2 medium carrots cut into ribbons
1 medium zucchini cut into ribbons
1/4 cup green onion chopped
1/2 tablespoon toasted sesame seeds
Instructions
With the help of a spiralizer, spiralize the zucchini and carrots into noodles. (In case you don't have a spiralizer, simply peel off the zucchini into long ribbons using a vegetable peeler. Stack the ribbons on top of each other and then cut them into thin slices. Repeat the same for carrots.)
Heat a skillet (sauté pan) over medium heat settings. Add 1 tablespoon olive oil. Once it's hot, add garlic + ginger + red chili + onion. Stir and saute for 3-4 minutes (over medium heat) or until the onions turn golden.
Add tomato puree + turmeric + cumin + salt + pepper. Stir and cook for 4-5 minutes (over low-medium heat) or until the mixture thickens.
Add carrot & zucchini ribbons. Mix well and cook for 3-4 minutes. Turn off the heat. Sprinkle green onions (and mix), transfer it to a serving bowl(s) and garnish it with toasted sesame seeds. Serve hot!
