Ingredients
1/4 cup extra virgin olive oil
1 tablespoon lime juice
1 tablespoon red wine vinegar
1 teaspoon brown sugar
2 bunches asparagus (trimmed and cooked)
5 ounces salmon fillet (cooked and flaked)
8 cooked shrimp (peeled and deveined)
4 ounces baby spinach leaves
1 avocado (peeled, pitted and sliced)
1 cucumber (small, cut into ribbons)
4 ounces snow peas (trimmed)

Directions

For the dressing, whisk oil, lime juice, vinegar, and sugar in a small bowl until well blended. Season to taste.
step 2
Toss asparagus, salmon, shrimp, spinach, avocado, cucumber and snow peas in a large bowl. Add dressing; toss to coat.
