Classic with spiral pasta homemade Italian dressing is a suitable potluck or summer time facet dish. It’s easy to make and all and sundry constantly loves it!


INGREDIENTS
12 oz uncooked wholewheat rotini
¼ cup extra virgin olive oil
¼ cup butter
1 whole garlic clove
½ cup halved red grape tomatoes
¼ cup pitted and chopped mixed green and black olives
1 Tbsp drained capers
1 Tbsp chopped fresh parsley
2 tsp lemon zest
parmesan cheese to garnish
salt and pepper

DIRECTIONS
1. Cook pasta in boiling salted water according to package directions, approximately 9-12 minutes. Drain and set aside.
2. Heat olive oil, butter, and garlic clove in a large nonstick skillet over low heat for 3-5 minutes. Discard garlic.
3. At this point, you could toss some cooked noodles with just enough of the olive oil mixture and grated parmesan to coat pasta. Season to taste with salt & pepper and serve alongside roasted chicken. Or dice the chicken and stir into the pasta.
4. For a more flavor-packed sauce, stir tomatoes, olives, capers, parsley, and lemon zest into the remaining oil mixture over low heat until warm, about 3 minutes. Toss sauce with remaining cooked pasta and grated parmesan to coat. Season to taste with salt and pepper, and serve with roasted chicken.
Tip: If children will eat the ingredients in the above flavor-packed sauce, simply double the amounts of the extras: tomatoes, olives, capers, parsley & lemon zest, follow the method, and toss with all of the pasta.
